Thanksgiving Cottage Cheese Pancakes!
Growing up, Thanksgiving was a big celebration at my house. Before we set off to my grandparents’ for an amazing Thanksgiving dinner filled with turkey, stuffing, and every flavor of pie you can imagine, we would always begin the day together in the kitchen making a special Thanksgiving family brunch. We all had to help, making the different dishes…from bacon and eggs to hash browns and toast. I grew up in charge of the cherry turnovers, but I really loved “taste testing” our Thanksgiving pancakes!
We only make these one day a year, but I could eat a plate full every morning! They are SO amazing, and this year I got my dad’s permission to share our recipe with you. Below is the classic recipe my dad has been using for over 30 years...with an optional twist Nate (@suddenlysee) and I have added since getting married. 😉
Cottage Cheese Pancakes
Ingredients
• 1 cup cottage cheese
• 4 eggs (lightly beaten)
• 1/2 cup flour
• 6 Tbsp clarified butter
• Pinch of salt
• (Optional twist) Add 1/4 cup mini chocolate chips
Directions
• Mix all ingredients in a bowl
• Heat griddle to moderate heat (just under 400')
• Brush lightly with extra clarified butter
• Ladle batter about 2 tbsp at a time onto griddle
• Cook 2-3 minutes, then turn to brown other side

Once all our brunch food is prepared, we gather at the dining room table where my dad reads a special blessing he’s written for each of us. Then we all share at least one thing we’re thankful for this year. We finish by singing the song “God is So Good” together before diving into our delicious feast.
I’m so thankful for the gift of one more year with my beautiful family and friends, I don’t ever want to take the gift of our time together for granted.
